Announcing Our New Collaboration with Wendy of Happy Apple Vegan
Our top priority at the Longmont Ledger is to amplify the voices of local Longmont creators and strengthen local businesses, who have an abundance of talent and creativity. We are pleased to introduce a new contributor to our magazine: Wendy, the creator of Happy Apple Vegan, a vibrant plant-based recipe collection and thoughtful space for food, storytelling, and wellbeing.
Beginning this month, we will feature select original recipes and posts, with full articles and instructions available on the Happy Apple Vegan blog.
Wendy brings multidimensional expertise to her work. She is a freelance writer in Longmont, plant-based recipe developer, food photographer, former educator, lifelong endurance athlete, and, at the center of it all, a mother committed to healthy living and mindful stewardship of our planet.
Her culinary and creative approach is rooted in lived experience. After years navigating a difficult personal relationship with food, she rebuilt that relationship from the ground up—transforming fear and control into curiosity, nourishment, and connection. Her writing and recipe development reflect this evolution: food as fuel, community, creativity, and joy.


A dedicated vegan since 2013, Wendy first embraced a plant-based approach alongside her husband in pursuit of better health and athletic performance. The results exceeded expectations, delivering not only greater vitality but transformative improvements in her overall wellbeing. Over time, their personal health experiment grew into a long-term family commitment to a lifestyle that supports environmental sustainability, compassion, and conscious living.
Wendy’s plant-forward philosophy compliments her other endeavors—marathons, triathlons, an Ironman, and even the Grand Canyon Rim-to-Rim-to-Rim. It also fuels her inventive work in the kitchen, where she explores the colors, textures, and sounds of cooking with produce-driven creativity.
Her recipes have been published and featured across numerous outlets including Organic India USA, Clean Eating, Cooking Light, Delicious Living, Natural Health, Natural Solutions, and Good Karma.
